Description:
Very cool fermentation with aromatic yeasts has maximised the expression of stonefruit and blossom aromas of this Chardonnay. The palate is rich and mouth filling, offering flavours of ripe nectarine and grapefruit. These flavours linger in the mouth along with a hint of honey sweetness.
A small portion of malolactic fermentation adds a layer of richness and length to this wine.
With such ripe, vibrant stonefruit flavours, this wine will partner well with many dishes, especially those including fish, sweet seasonal vegetables, chicken or fresh herb pasta dishes.
Viticulture:
Clone 15 Chardonnay planted as two metre wide rows, two metres between vines, trained as two cane VSP. Predominant soil type is clay loam with pumice sub layers. Cropping levels are vine specific, decided at pruning and again at fruit set. Canopy management aims at maximising air flow, sun exposure and fruit health.

Brix: 23 pH: 3.15 TA: 7.5 g/L
Winemaking:
Crushed and pressed to tank for cool settling, after which two yeasts were selected to enhance mouth feel and fruit expression. Cool fermentation has ensured the fresh aromas and characters of this fruit have been retained to be fully expressed in the final wine. The resulting wine shows good palate weight, while having balanced acidity.
